This is very easy, tasty and mainly zucchini. It has surprising ingredients and they work well together. It is important to not let the mixture sit or the zucchini loses its liquid and the mix becomes stodgy.

  • 1 egg
  • 1/2 cup grated Parmesan
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1 tbs tarragon, chopped
  • 1/4 cup parsley, chopped
  • 1/4 tsp grated nutmeg
  • 1/2 kg zucchini, coarsely grated
  • salt & pepper to taste

Directions

  1. Combine all of the batter ingredients then fold in the herbs and zucchini. Cook immediately.
  2. Heat a couple of tablespoons of oil in a pan and cook  2-3  minutes  on  each  side  until lightly browned. Drain on paper towel.
