Black bean salsa

Black Bean and Corn Salsa

This is very tasty and keeps for a couple of days.

Ingredients

  • 1/2 cup dried black beans (soaked overnight, washed several times and cooked until tender)
  • 2 corn cobs, cooked in their husks on a BBQ or grill plate for about 20 minutes until browned and tender
  • 1 red onion finely chopped
  • 1 capsicum finely chopped
  • 1/2 bunch coriander finely chopped
  • lime or lemon juice
  • olive oil
  • salt and pepper to taste

Method

  1. Husk the kernels off the corn, add all ingredients seasoning to taste.

Tomato and Jalapeno Salsa

Ingredients

  • 6 small tomatoes – finely diced
  • 1 large red onion finely diced
  • 6 spring onions – finely diced
  • 1 cucumber – seeds removed, finely diced
  • 1/2 cup jalapenos finely diced
  • juice of 1 lemon
  • olive oil
  • salt and pepper to taste

Method

  1. Husk the kernels off the corn, add all ingredients seasoning to taste.
