So we grew radishes – all types – fantstic because they grew so fast but the problem was what to do with them. This is so fast and is a great sauce to have with steak. Itis strong and bites a bit like horse radish sauce.

(enough for a side dish for 6)

Ingredients

  • 3 washed radishes
  • 1/2 cup natural yoghurt
  • clove garlic
  • salt and pepper to taste

Method

  1. Using the fine side of a box grater grate 3 washed radishes. Cut off the tail and twist off the leaves. Use the leaf end as a handle when grating.
  2. Leave sit for a while then squeeze out the juice. I’ve tried adding the juice to what is being cooked at the time but it doesn’t have a lot of flavour so just throw it away.
Grind a clove of garlic with some salt and pepper or grate it using the grater and add it to the squeezed out radishes.
  3. Add about half a cup of natural yoghurt and stir together. Add more yoghurt to achieve the correct quantity.
  4. Leave sit for a while for the flavours to develop.
  5. Serve as a side with meat.
