This is a good moist easy cake with ingredients that are easy to find.
TIM TAM CHOCOLATE CAKE
Ingredients
- 150ml tasteless vegetable oil
- 150ml milk or kefir
- 2 eggs
- 3 tbs golden syrup
- 1 cup plain flour
- 2 1/2 tsp baking powder
- 1 cup brown sugar
- 1/4 cup cocoa
- 14 Tim Tams, 10 roughly chopped for the batter, 4 chopped into larger chunks for the topping
- 2 x 75g butter, melted into separate bowls
- 1/4 cup cocoa
- 1 tbs biscoff spread
- 1 cup icing sugar
Instructions
- Preheat oven to 180c. Line two loaf tins with baking paper.
- Whisk oil, milk, eggs and golden syrup in a stand mixer until very well combined.
- Add the flour, baking powder, sugar and cocoa to the liquid mixture and mix until just combined.
- Remove the bowl and fold in the 10 chopped Tim Tams.
- Pour equal amounts of the batter into the two cake tins.
- Bake for 25 minutes, or until cooked through, checking with a skewer.
Remove from the oven and leave for a few minutes to cool a little before removing from the pan and placing on a rack to cool. - While the cake cools, make the icing and allow it to thicken at room temperature until the cakes have cooled completely.
- To make icing for layer 1, combine 75g melted butter and cocoa powder, then mix through 1/2 cup icing sugar until well combined.
- To make icing layer 2, combine 75g melted butter and the biscoff butter, then mix through 1/2 cup icing sugar until well combined
- To assemble the cake, cut the top of one of the cakes to make it even. Spread the chocolate icing onto the cut cake, then place the second cake on top. Top with the biscoff icing.
- Sprinkle the remaining chopped Tim Tams over the icing.
