This has to be the simplest, fastest dessert possible – make it out of what’s in the cupboard/fridge – and it takes less than 10 minutes, only needing to be taken out of the fridge and served.

NOT QUITE CHEESECAKE – LEMONY PUDDINGS

Ingredients

  •  150 ml of juice from lemons, limes or other citrus
  • Zest of 2 lemons/limes (do it before juicing)
  • 1 tin sweetened condensed milk
  • 15oml thickened cream
  • 12 gingernut biscuits (or, on the basis that the ingredients had to be in the cupboard /fridge – granola mix with some shredded coconut, powdered ginger and extra sugar to taste all toasted in a small fry pan – just get a good flavour and let it cool a little)

Instructions

  1. Put the condensed milk and cream  into a bowl and stir together.
  2. Add the zest and juice and stir the mixture until it is thick and smooth.
  3. Divide the mix between 6/7/8 small glasses or ramekins, sprinkle on the topping then and chill until set and ready to eat. Takes a couple of hours.
