This is really quick and I am loving making what used to be biscuits into bars. It is so easy to throw the mixture onto a baking tray, smooth it out, put it in the oven, wait 15 minutes or so and you’re done.

The alternative is to scoop the mixture into balls, spread the balls out on a tray, then cook tray after tray and remembering to not forget there’s something in the oven.

CHOCOLATE CHIP OATMEAL BISCUIT SLICE

Ingredients

  • 1 cup butter, softened to room temperature
  • cup brown sugar 
  • 1/2 cup caster sugar
  • 2 eggs
  • tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp bicarb soda
  • 1 tsp baking powder
  • 1 1/2 cups plain flour 
  • 2 cups rolled oats
  • 2 cups chocolate chips, whatever is in the pantry
  • 1 cup sunflower and pumpkin seeds mixed.

Method

  1. Preheat oven to 170°C.  Coat a 20 x 30 pan with cooking spray or line with bsking paper.
  2. Beat the butter, brown sugar, and white sugar until smooth and light in colour.
  3. Mix in the eggs one at a time.
  4. Add the vanilla.
  5. In a separate bowl mix together the salt, baking powder, carb soda, flour, seeds, choc chips and rolled oats.
  6. Add the dry ingredients to the creamed butter and sugar and mix until just combined.
  7. Press the mix into the pan and bake for 25 to 30 minutes, rotating twice, until until golden brown.
  8. Allow to cool in the tray before cutting
