These are quite good, paleo and fill the need for a bit of something to fill the mid afternoon or after school snack gap. I think that they would be good to go with bacon and eggs for people who still feel the need for something a bit like a carbohydrate.

This recipe is so easy compared to standard pancakes. You don’t let the mix rest before cooking. It is just a matter of mixing the flour, water, coconut sugar and eggs together, the other ingredients are optional but I can’t resist adding things to make flavours a little more complex.

Almond Meal Pancakes (paleo??)

  • 1 cup almond flour
  • 1/4 cup water
  • 2 eggs
  • 1 tbs coconut sugar (or maple syrup or artificial sweetener if you must)
  • 1 tbs oil (or coconut oil if you want the coconut flavour)
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • pinch salt
  • 1 tsp vanilla extract

Additional ingredients to be tried next time:

  • 1/2 tsp baking powder
  • 1/2 cup kefir instead of the water.

Try mixing in blender or with bamix to improve smoothness, and add more kefir or water to adjust the consistency.
