I love to make things to go with coffee. These can usually be made weeks before and stored in the freezer, the main problem that I then have is remembering to get them out. Serving straight from the freezer is ok as it is usually so hot on Christmas day that icy cold deserts go down quite well.

I am usually so exhausted by Christmas that I have to have a timetable to tell me when to get the next course on the table as I am not at all hungry all day.

Very adult rocky road

Ingredients:

  • 540g White Melts
  • 3 tbsp vegetable oil
  • 3/4 cup pistachios, chopped
  • 50 g mini marshmallows or pink large marshmallows chopped into small pieces
  • 1/2 cup cranberry and raison mix
  • 1/4 cup shredded coconut

Method:

  1. Grease a 31 x 26cm shallow tray. Line with baking paper, allowing an overhang at both long ends so the hardened mix can later be removed for slicing.
  2. Melt chocolate and combine ith oil. Add other ingredients.
  3. Press mixture tray and refrigerate for 3 hours or until firm.
  4. Slice into smallish pieces or use a str cutter and make stars – you could then rework the remainders to truffles and dip in the hard chocolate topping recipe for use on another day.
