This is one very versatile combination of great ingredients. I don’t buy the best quantity blue cheese, just one that I enjoy.
A really runny cheese will not need as much as of the milk, if any, but this all depends on what you are going to use the mix for.
This can be used as a dip, drizzled on vegetables or served as a dipping sauce for chicken wings, particularly “buffalo wings”. Each of these uses will need a different consistency, just adjust the milk quantity.
BLUE CHEESE DIPPING SAUCE
Ingredients
- 1/2 cup sour cream, about 150ml
- 1/2 cup crumbled blue cheese about 75g
- 1/4 cup mayonnaise
- 1 tsp crushed garlic
- 1 – 2 tbs milk or kefir, for a runnier consistency
- Juice of half lemon
- Salt & pepper to taste if necessary
- Parsley, chopped, and some extra for garnish
Method
- Put all ingredients, except salt & pepper in a tall jug and briefly process with a stick blended until combined but still chunky.
- Taste and season if necessary
- Stir in some chopped parsley (keeping a small amount aside)
- Put into a serving bowl and sprinkle with the remaining parsley.
- Serve
