This couldn’t be easier and more pure – there is almost nothing in it and as breakfast when you are totally over no carb days then it fills the gap.
There is enough here for 4 serves – it is so easy that to make enough for two or six is just a matter of doubling or halving the ingredients – nothing is very difficult.
Ingredients
- Sweet potatoes – about 3 medium sized ones, peeled and grated (food processor on the shredding blade)
- 3 eggs
- 1 tsp salt or Vegetta for a more interesting taste
- pepper to taste
Method
- Mix the salt and pepper in with the grated sweet potato, stir well and let sit for a few minutes until the moisture is being released from the sweet potato.
- Gather up handfuls of the mixture and squeeze it well. Put the squeezed mix into a separate bowl with the eggs, stir well. Heat a fry pan with a few tablespoons of coconut oil and add dollops spreading the mix out with a spatula and flattening them down as they cook. Turn when beginning to brown.
- I would consider adding a handful of parsley if I had any growing at the moment.
