Black Bean and Corn Salsa
This is very tasty and keeps for a couple of days.
Ingredients
- 1/2 cup dried black beans (soaked overnight, washed several times and cooked until tender)
- 2 corn cobs, cooked in their husks on a BBQ or grill plate for about 20 minutes until browned and tender
- 1 red onion finely chopped
- 1 capsicum finely chopped
- 1/2 bunch coriander finely chopped
- lime or lemon juice
- olive oil
- salt and pepper to taste
Method
- Husk the kernels off the corn, add all ingredients seasoning to taste.
Tomato and Jalapeno Salsa
Ingredients
- 6 small tomatoes – finely diced
- 1 large red onion finely diced
- 6 spring onions – finely diced
- 1 cucumber – seeds removed, finely diced
- 1/2 cup jalapenos finely diced
- juice of 1 lemon
- olive oil
- salt and pepper to taste
Method
- Husk the kernels off the corn, add all ingredients seasoning to taste.
