Amazingly tasty, the strawberries and blue cheese complement each other and having it with steak and a bearnaisse sauce is delicious.
Ingredients
- 1/4 cup white balsamic
- 1/2 cup extra virgin olive oil
- 1 tsp dijon mustard
- 1 bunch rocket / baby spinach (washed and drained)
- 4 slices of prosciutto or pancetta (torn into pieces)
- 1 punnet strawberries (hulled and quartered)
- blue cheese (crumbled)
Method
- Place balsamic, mustard and oil in a bowl. Season with sea salt and freshly ground black pepper, then whisk to combine the rocket and strawberries in a large bowl, then tear over strips of prosciutto.
- Tear the grilled bread into chunks and add to the salad with the crumbled blue cheese.
- Toss gently to combine, then drizzle with the dressing and serve immediately.
