Found this great website – http://www.rhubarb-central.com/ to help with recipes and growing hints. When we have some rhubarb growing I will revisit.

I have ignored all the advice that says not to eat any in the first year. The plants are so huge and the old leaves are just dying so why not eat them before they die.

This is so quick and so good on cereal with natural yoghurt. I am in love with it!

Ingredients

  • Rhubarb stems – chopped into 1 cm pieces
  • Sugar – variable quantity depending on how sweet you like food. It’s best to go a bit light and add more at the end
  • Vanilla paste – or extract or pod
  • Squeeze of lemon juice

Method

  1. Put the lot into a glass dish and cook in the microwave for a while – about 6 minutes (depending on quantity) and it’s done.
