This is great. I just washed the zucchini and ran them through the grater on the food processer, packed the result into zip lock bags, pressed out as much air as possible, lay them flat on a tray and froze them. I am hopeless at labelling things that I put in the freezer – note to self – label them next year!

The bags make them easy to defrost and go into soups, stews, casseroles and pasta. I haven’t yet tried it in a frittata but I suspect they will be too soggy for that. It all depends on how desperate we are for something to eat.
